Usage of Transglutaminase
1. Meat & Restructured Meat Texturizing Agent
Catalyzes protein cross-linking for restructured steak, ham, sausage and meat rolls. Improves elasticity, water holding capacity, sliceability and freeze-thaw stability, reduces phosphate addition.
2.Aquatic Product Modifier
Used in surimi, fish ball and seafood processing. Enhances gel strength, reduces breakage and improves texture of fish products.
3.Soybean & Plant Protein Processing Aid
Strengthens gel network of tofu, vegetarian meat and plant-based protein products, boosts firmness and reduces cooking loss.
4.Bakery & Noodle Quality Improver
Enhances gluten network stability for noodles, dumpling wrappers and baked goods, increases chewiness and reduces boiling breakage.
